Picnic Salad Winner: Watermelon Blueberry Salad with Basil and Red Onion

That recipe title is a mouthful, but really I find it hard to describe this salad otherwise. Think sweet, yet tangy and oh so refreshing. Tart blueberries that pop in your mouth against soft, bright pink, sweet watermelon and red onion, sliced paper thin. All pulled together with fresh basil and a splash of balsamic vinegar. Take this salad to your next potluck picnic and come home with an empty bowl!


Balsamic Watermelon Blueberry Salad with Basil and Red Onion
1 whole, small, seedless watermelon (or 1/2 a big one), cut into 1" squares
1 pint blueberries, rinsed and drained
1 small red onion, thinly sliced (about 1/2 cup)
8 large fresh basil leaves chopped
2 Tb balsamic vinegar
pinch of salt and pepper

1.) Place the watermelon in a large bowl. Add the blueberries, onions and basil. Pour the balsamic vinegar over top. Sprinkle with a pinch of salt and few cracks of black pepper.
2.) Using two large serving spoons, gently combine.
3.) Yummiest when the ingredients have had time to marry and marinate before serving. Best when served chilled.
4.) If you're going to make this the night before, chop the basil and add it as you head out the door so it's still nice and green when you arrive at the picnic.
